Buffalo Chicken Sandwich (10 Points+)

What's that you say?  How can one possibly eat a buffalo chicken sandwich and be within their points?  And there was blue cheese spread on the bread?  Oh yes folks, for a mere 10 points you can eat a buffalo chicken sandwich.  Score.   Do you want to know how it gets even better?  Of course you do.  It was so easy G was able to make it!

Ok, I'm not really sure how easy it was, but he's not exactly a master in the kitchen beyond making eggs and toast, but I came home with a killer head ache and handed off a recipe and he produced a delicious sammich. It had to have been easy because he made it and it turned out tasty.  He did totally screw up the whole cut up the chicken into small pieces thing, but close enough, one slab-o-chicken works too.



 Buffalo Chicken Panini
Adapted from Cooking Light

Ingredients
1/4 cup hot pepper sauce, divided
1lb chicken breast tenders
 Cooking Spray
1/2 cup (2oz) Crumbled Blue cheese
6 tbsp canola mayonnaise
8 1oz slices of white our sourdough bread

Instructions
-Preheat broiler (yes that's right folks G figured out how to broil chicken without help)
- Cut the chicken into bite size pieces
-Combine 2tbsp of the sauce and the chicken in a bowl.
-Place the chicken on a broiler pan coated with cooking spray.  Broil 4 minutes on each side until it's cooked through.
-Put the chicken in a new bowl (you don't want to tango with salmonella) and combine with the remaining sauce
-Combine the cheese and mayo in yet another bowl (I know I know lots of dishes to do here, but it's buffalo chicken we're talking about it's worth it)
-Put 3tbsp of the cheese on 4 of the slices of bread and put 1/4th of the chicken (note here .... 3tbsp is probably WAY too much.  G definitely put less and the blue cheese was more than present) and top with the other slices of bread
- Heat a grill pan on medium.  Stick as many of the sandwiches as you can on it and cover with a cast iron or other heavy skillet.   Cook for 3 mins on each side.
